Acorn-fed Iberian ham is the best quality of Spanish hams, elaborated from acorn-fed Iberian pigs.
Iberian pigs roam freely in the pastures (called Dehesas) during the last stage of the fattening process and are fed on acorns and natural herbs. Iberian pig breed has black hooves or “pata negra” in Spanish, another popular way to name this ham, which describes the black hoof that remains on the ham throughout the curing process and distinguishes it from a Serrano ham.
This ham has a much more complex and intense flavor, with a note of sweetness that is unparalleled. The meat is dark red, marbled with veins of fat. The flavor is sweet, nutty, and not too salty.
Its fatty acid composition is very balanced and not only does its consumption not increase cholesterol levels, but rather it help to lower them by providing abundant amounts of unsaturated lipids.
