MANCHEGO P.D.O. GRAN VALLE.-Old
Manchego P.D.O. is the best known Spanish cheese in the world and aged Manchego is the crown jewel. More limited in production than younger pieces, Old Gran Valle Manchego P.D.O. has a developed, strong and piquant taste and crunchy texture worthy of all the prizes it has obtained.
Manchego P.D.O is produced in La Mancha. It can only be called Manchego if it is made in this geographical area, using Manchega sheep milk and aged for at least 60 days. It also has a casein seal at the back and a zigzag pattern etched into its rind.
Gran Valle Aged Manchego is matured for 9 to 12 months. It develops more nuances of aroma and flavor than younger Manchegos, becoming developed, strong and piquant, zesty and exuberant while its texture is a little bit dry and crunchy due to the crystallization of fat drops.
A masterpiece awarded several times at the well-known World Cheese Awards, obtaining SuperGold medals, the highest qualification, in 2016 and 2010; Gold in 2012; and Silver in 2011.
