It is characterized by being made with the milk ofour own merina sheep, it is made with raw milk of Merina sheep, natural vegetable rennet (by maceration of the pistils of the milk thistle flower "Cynara Cardunculus") and common salt, made and matured following traditional methods and with a minimum maturation period of 60 days.
